Basically the Mediterranean diet is all about consuming fresh fruits, vegetables, proteins and quality fats.
Mediterranean Diet Recipes – Baked Salmon with Toasted Almond Salad Recipe
4 (6 oz) – salmon fillets, skinless (1 inch thick)
1/4 tsp – salt
1/4 tsp – black pepper
2 tbsp – olive oil
Preheat oven to 425° F.
Sprinkle salt and pepper over both sides of the fillet.
Place fillet in a single layer in a non stick pan.
Drizzle 2 tbsp of olive oil over it.
Bake for 22 minutes.
Serve with Toasted Almond Salad
Toasted Almond Salad
1 – shallot, minced
2 tbsp – capers, chopped
1 cup – fresh flat leaf parsley, chopped
1/2 cup – toasted almonds, chopped
1 cup – cherry tomatoes, halved
1 tbsp – extra-virgin olive oil
Salt to taste
In a small bowl add shallots.
Pour vinegar and add a pinch of salt.
Rest for 30 minutes.
Add capers, parsley, tomatoes and almonds.
Add the olive oil and mix well.
